How do I create a new contact list for my e-mail and how do I move a contact from one list to another?

From your Address Book, press the menu key and choose New Group. Once you create the Group, press the menu key and choose Add Contact.  You can create multiple groups and contacts can be in more than one group at a time.  So to address your second question, simply add them to the second group and delete them from the first.
