You can create a profile that does this.
If you go into Profiles | Advanced. From this screen hit your menu button and choose New Profile. Give the profile a name like "Data Only". Scroll down to the Phone category and change the Out of Holster/In Holster settings to None. You can also customize the other categories to ring/vibrate as you wish.
Or you could just edit your active profile's Phone category. The reason I suggested making a new one is that if this is something that you're going to do every night, then it's much faster to swtich to the "Data Only" profile, then back to your regular one in the morning thah changing the Phone category each night.
