Within the actual Contacts and Calendar apps, check the options for them and ensure that Wireless Synchronization is turned off.
Then, check the BIS email configuration, and ensure that as well has Contacts and Calendar synchronization turned off.
Finally, if your actual data is already completely in Outlook, you should wipe out the databases on the BB, and then enable synchronization with Outlook (which will first do a one-way sync, thereafter it will be 2-way).
Occam's Razor nearly always applies when troubleshooting technology issues!
