Why having taken the upgrade has the phone lost my previously downloaded emails & texts as well as locations stored in my M8 GPS app?
Surely this data is not stored in the same memory area as the OS?

While doing an OS update using Desktop Software or even OTA , it does allow and offer a Backup of our data, Are you not offered !
Did you performed a backup of you data before this OS update . If you did then you can restore those data from these backup file.

If you did a backup , then please try this Knowledge Base to restore your data from those backup.
KB10339 : How to use BlackBerry Desktop Software to restore data to a BlackBerry smartphone from a backup file
And if you're using BlackBerry Protect for backup you can restore from there :

I got as far as the options to select what to restore, pressed <NEXT> and nothing happened.
Fundamentally, this is something I shouldn't be doing.
BlackBerry markets itself as a business tool, I want to use the tool, not configure it or restore data that should not have been erased as part of the update.
I like using the tool, I haven't got the time or inclination to mess about making it work properly.
Why is this not the thought behind every piece of code released by BlackBerry & it's App development partners???
