I think it's a problem with the mobile Youtube site.
If you Google the name of the video, and click the video from there, it plays in high quality.
Hopefully, Youtube/BlackBerry will resolve it soon because it's quite tedious doing it via Google.

I know, I am having the same problem. Even reset my phone today. The Google thing seems to be the only way round it for the moment.
