Hi,
i have a curve 8310 from at&t, which has many service books installed for apps such as themes, tones, graphics, etc. I delete them from the service book menu, but on reboot they come back. Is there a way to permanently remove them?

There's not way to permanently delete them.
Do this (which is what I do):
On your homescreen, Menu > Add Folder. Create a folder and name it something like ATT CRAP.
Then, any of those icons you don't want (ATT shopping, music, themes, ringtones, etc., there could be 8-10 of them), scroll to and highlight the icon > Menu > Move to Folder and place it in that folder. (According to your Operating System, you might need to move the icon differently).
Then, once all of the unwanted icons are in the folder, close the folder, and with it highlighted, select Menu > Hide.
So, all of the "trash" so to speak is hidden, and out of your way.

As JSanders said though some you'll just have to hide as they'll always be pushed down to your device.
