I performed an Exchange server failover from one data center to another using DoubleTake for Exchange. Then failed back to the production Exchange server after testing. This morning we have serveral BB users complaining about themes and settings that have reverted back to a previous time.
Any one have any suggestion as to why BB settings would change?

... makes no sense. BES doesn't talk with Exchange regarding HH settings at all.
Sure you didn't change anything else? Any SQL changes?

I'm positive I didn't change anything on the SQL server or BES server. Didn't touch either of the two. Its got me baffled. But my supervisor is pushing me to find an answer.
Any global or mass change the BES server has that could have been invoked? If the BES could not communicate to the Exchange server that it had an open connection with then suddenly it wasn't there would it prompt BB's to revert back to previous settings?

Is BES installed on a seperate box from exchange?
Is SQL on its own seperate box?
If both answers are yes then I am not sure how that would happen.
As Andy said, Exchange does not hold any settings for the BB HH's. It is all stored in the SQL database.

I would have been the one to do DB restore on SQL but that didn't happen. SQL or BES was not touched during the Exchange failover.
Exchange, BES and SQLDB are all on different servers.
My BB didn't change and I'm using something other than the default theme and a background pic. Right now I know of 3 out of 65 whose background pic and\or theme did change.
