I have been following your posts for a couple of days now as I have experienced the exact same problem with my 9530. I have tried to delete, restore and reinstall the wallet app a number of times. Today, for some reason, I was finally able to install a version that worked and did not disappear.
Essentially what I did was work solely from the MyWorld page in Blackberry App World. I can't remember what state the app was in when I began but I think it showed as "archived" in MyWorld. I went thru a series of steps where I re-installed it, deleted it (which didn't remove it but archived it again), reinstalled it, etc., all from the MyWorld screen. At some point in doing this, it finally came up with a screen that asked me if I wanted to upgrade to v. 1.0.1.31 from 1.0.0.27 (don't hold me to this version # number as I wasn't paying that close attention). At any rate, this surprised me because I am pretty sure that 1.0.1.31 is the version that had been showing prior to my beginning this process. Once I ran the upgrade, the app showed up in the folder where I had originally placed it and ran fine. I went back and restored the data file from the OS upgrade backup and all is well.

Let us know how you make out. If it works, maybe you can document it better than I did.

I unfortunately I have not been as lucky as you.
Steps:
Each time I install or restore I check folder it was originally in and options->applications. No luck. I think I need RIM to either recompile for OS 5.0 or, well I don't know. Change the install page on the browser to let it install?
Ha Ha, I pressed the post button too many times (didn't seem to respond).

Try doing two installs in a row from the MyWorld screen and see if that prompts the upgrade message. Wish I had kept better track of what I was doing. All I know is that I was in the MyWorld screen and got it to install from there. Sorry I can't be more of a help to you.

There is a update to BlackBerry Desktop Manager (vs 5.0 to vs 5.0.1). Will try to install from backup to see if it will work now with the update. Just need the install to finish (Roxio is taking forever). Don't now if it will work but I tried the double install and it didn't work.
Edit: Nope, still nothing.

Ok so another update came out for BlackBerry Desktop Manager (said it was a update to the Application Loader) so I installed, and hoped that it would install BlackBerry Wallet. Still nothing, I get an error stating that the application is not compatible with the device.
Is there any reason to how it is not compatible? Even RIM's own Knowledge Base states that once you update to OS 5.0 you simply reinstall BlackBerry Wallet. Am I missing something?
Please someone from RIM pop in and say that they will recompile it for OS 5.0 or put change the (what I think is the reason) JavaScript on the install page (when in the browser) so that it will let me install it.
I usually don't like hounding, or complaining about something over and over but I am desperate to have this application running. I learned not to put all my eggs in one basket (or in this case, app) but I can't find any other comparable app that is as secure as BlackBerry Wallet. I do keep backups but they are no use if they cannot be read.

Finally, I got BlackBerry Wallet working. I have to thank ppetroska because what he did ended up helping me, but it wasn't what fixed my problem. Today RIM released an update to BlackBerry App World (1.1.0.20 -> 1.1.0.23) and succeeded in installing BlackBerry Wallet. This is similar to what ppetroska did only he updated BlackBerry Wallet, I updated BlackBerry App World. I restored the data using the steps provided by FozzyBear. I'd also like to thank klyubin for trying to help me.
