If I update my phone with a carrier's version of the OS does it lock my phone to that carrier

I live in Hong Kong where the purchase of Unlocked phones is common. If I update my phone with a carrier's version of the OS does it lock my phone to that carrier, disable anything or just add the carrier logo's?

 

Are there non-carrier updates available?

I am on AT&T. Please edit your Personal Profile with your DEVICE TYPE, DEVICE OS and Carrier

once unlocked, no OS can lock it again.
