Currently, while I am talking on the phone my ear lobe or face either mutes the call, turns on the speaker phone, etc.
How do I turn off the touch screen before I start talking on the phone?

Hi Anthony,
As far as I have known, the screen turns off automatically since your face )specially your ear) covers the sensor which is located near the coverage indicator light.
If there is an issue with the phone going on mute, there must be some distance between your face and the screen which tricks the sensor into thinking that the phone is not being used for a call.
You can test this by covering the coverage indicator light with your thumb during a call and can see that the display turns off.
To answer your question, I don't think there is a setting or an option that allows turning off the display before a call.

You're correct about that one. If it continues to be a problem, there are apps in App World that will disable the touchscreen during a call so this doesn't happen. I believe one of them is called TalkLock. A search in App World should yield some results.
