When using large substitutions in emails the phone locks up. I have a standard email I send back to sales leads, that now locks up the email and keyboard forcing me to restart it. I can use gestures but the keyboard is unresponsive.

I got my device to lock up in the manner you described once and it substituted correctly another time. One thing I noted though is I don't see any way to add paragraphs in word substitiution. There is no enter key on the keyboard and when I pasted your text in it removed the formatting so that it was one long line.
