the time in the simulator is incorrect and setting it from the settings pane is disabled, i wonder if there's another wat to set it from

If you go to the Settings Menu (Gear Icon top right corner) and scroll down toll you find the Date & Time options.

This should allow you to set your correct time zone but if this is still incorrect (as mine is) unselecting the option

to set the Date and Time Automatically should allow you to manually set your time.

Certainly that worked for me. Hope it works for you
