So, I called T-Mobile, they were clueless. I don't know why I bother with them since most of the time i've already tried everything they're gonna suggest. Anyways, they said they couldn't help me and would have to transfer me to RIM. To do this, they would have to collect all kinds of information (i.e. name, PIN, mother's maiden name, my dead dog's name oh and one key thing, what BB Desktop manager version I was using). There's where it hit me. I told the lady I was using a MAC and she said "Oh". That was it. I knew I had to try one last thing before staying on the phone for 10 hours trying to troubleshoo t it with RIM.
I went to my PC, installed the latest BBDesktop software, plugged in my phone, got rid of a few apps I wasn't using to free up some space, and then (with the phone connected). I clicked on the Email setup button on my phone. It checked for updates available, and when I clicked to download it, it worked just fine. It said it needed to reboot, so I let it.
Once back on, I checked it and was able to add/delete/ edit email accounts just fine!
Well, there you have it. I'm not sure whether it was the clearing of memory space, using a PC version of the Desktop manager, or leaving the phone plugged in, but that's how I fixed my issue. Hope it works for you!

This is World Wide problem. I'm using BB9780, had the same update installed once and the BB crash and burn. Had to go to service center to reboot and reload the OS. Until now the update keep popping up. Yes, I also cannot change the email setting because of the software trying to update the email setup. Once you choose No, it will return to Setup Option instead of Email Setup. It seems like a genuine update from RIM but something must be really wrong somewhere.
Hoping that RIM updates and solves the problem but nothing has change since, it has been months now.
