I don't know where the 6.1 package is on the Blackberry website either, though others seem to have found it. I got it off Softpedia by googling:
softpedia blackberry desktop 6.1
That should give you the right link as one of the top search results. It has to be your choice whether to trust Softpedia, obviously...

If you want to downgrade to the Desktop Software 6.1
--From your PC > Control Panel > Add/Remove Programs, remove your current BlackBerry Desktop Software.
--Reboot your PC (Start > Turn off , etc)
--Upon startup, download this file: "610_b034_multilanguage"
from this link: http://www.blackberryforums.com/rim-software/25338
--Install that file by double-clicking on it and following the prompts to complete the installation.

My provider is T-Mobile so I went to their site, downloaded 6.x, and am back in business.

At this site there are several choices. The direct link to 6.1.0.20 is: http://depositfiles.com/files/li0iwomas
I believe 6.1.0.34 is also there but you must follow the link JSanders provided above.

I am NEVER doing an auto-update with my Blackberry again. V7 has been a nightmare and has wasted far too much of my time trying to get back to 6!
