No, you are missing nothing. If you even once connect via USB your Z10 to that computer with Link, then Link will "punch through" the setting on the Z10, and map the drives no matter what you set on the Z10. You also can via WiFi use Link to do what it can do, still regardless of the on-device setting.
There is plenty of debate as to if this is a security problem or not...I think it is, personally. But I have yet to find (honestly, I haven't actually dug around yet) anything official as to if this is WAD (Working As Designed) or a bug.
