It seems most things I write cause problems with the Playbook simulator.
I tend to write most of the HTML page content out from JQuery
The simplest things can cause the Simulator to die
if(debug) $("#debuglog").append("<b>Try to display</b> " + sp + "<br />");
Here I'm just writing to a div called debuglog so I can see what's going on - sp is a page I just pulled in locally via Ajax - have to write errors out, its the only way to debug a page.
That broke things, removing the <b>old tag caused it to start working again in the phone simulator
It still doesn't work in the Playbook simulator - is it going to work on an actual Playbook?
All the stupid little things that the WebWorks SDK complains about just work in Android

Answering myself for the benefit of others
Buried DEEP in the forums you'll find a thread about the Playbook having problems with JQuery 1.5.1
The solution is simple - downgrade to 1.5.0 or upgrade to 1.5.2 when it comes out
It took me a week to find out what was wrong. All my apps now work simply by changing to 1.5.0
Whilst browsers work fine with 1.5.1 the Playbook simulator doesn't
I hope that this helps those of you out there who are as frustrated as I was
