I'm running BES 5.0 MR2 and everything seems relatively normal except when I go to configure peoples Private Contact Folders under the Messaging Configuration -> Email menu. There doesn't seem to be a SAVE or SAVE ALL button. I'm definitely in EDIT USER mode and can make changes but can't save them...

You should be able to click on "Continue to user information edit" link after making your changes. This will take you back to the user info screen which will then have the "Save all" link at the bottom.
