It's been about an hour and is not giving me the option to 'cancel'. I don't want to simply unplug for fear of losing anything on my phone.

If it's taking that long, there's something wrong. I've unplugged MANY phones when told not to and have never had issues. Even if you do run into trouble, I assume you have proper backups done with BlackBerry Desktop Software?
I say go ahead and unplug it. Cheers.
