Nevermind, I'm pretty sure I fixed it!
For people having a similar problem::
If you changed any contact's ringtone or text alert and adjusted the volume (let's say, volume: 1 rather than keep it on "Active Profile"), that's what needs to be changed, because that customization apparently overrides the profile.

Had the same problem, but I think this is a better idea...
Create a NEW 'Sound Profile' and call it something like "QUIET."
Then modify that profile to assign VIBRATE or SILENT (or whatever you wish) to your emails, rings, SMS, whatever.
When you want the phone silent, simply select the QUIET profile and the phone will be totally silent (or vibrate if you wish) as selected in the QUIET profile.
