I have changed my airtime provider and kept my current phone. My email is being delivered from Outlook to my phone without me having to change any settings but in doing so the email in Outlook is now shown as read even though I haven't actually read it on my PC. How do I keep it so that all emails in Outlook remain as unread until I actually read them on the PC?

I suggest the following steps, in order, even if they seem redundant to what you have already tried (steps 1 and 2 each should result in a message coming to your BB...please wait for that before proceeding to the next step):
1) Register HRT
2) Delete and Resend Service Books
3) Batt Pull Reboot
See if that cures the issue. If not, then review this:
Ensure that you do not have it configured to synchronize Deleted Items if it is capable of doing so. Otherwise, you might want to remove and reconfigure that email account on your BB.

Thank you for your reply. I've carried out your instructions to the letter and I'm afraid the situation is the same, mail gets delivered to my phone but as soon as it does, regardless of whether I read it on the phone or not, it shows as read in Outlook. What else can I do? I am using Microsoft Exchange if that makes any difference

That's why I asked about the other things. With either Personal or Enterprise (BES), you can get email wirelessly, and in some cases even calendar, and contacts wirelessly. But only via BES can you get Tasks and Notes wirelessly to your BB. So, knowing that you get email wirelessly does not, unfortunately, answer the question...rather Tasks and Notes are the critical component of the question. If you receive those wirelessly to your BB, then you are on BES.
You also can check via Manage Connections > Services Status -- there will be line items for both BlackBerry Internet Service as well as BlackBerry Enterprise Service...their status indicators will also help understand if you are on BES or not.
In addition, if indeed you are not on BES, then still there is another piece missing from this puzzle. Exchange never faces the internet itself (well, it shouldn't). Rather, something else acts as a gateway between the internet and your Exchange server. Outlook Web Access, POP, IMAP, or some other gateway should be in place to facilitate receiving email to your BB wirelessly.
my emails are forwarded to my phone by Outlook.
That might need some further clarification. There is an "older" methodology whereby you could run a PC-based app that would forward, from the PC-based Outlook client, emails to your BB ("Desktop Redirection")...but that method has been expired for some time, though the software to do it can perhaps still exist. So I'd need to understand exactly what you mean by "Outlook" -- your desktop Outlook client? Outlook Web Access? Something else?
On Vodafone the emails were not shown as read when they were forwarded and now they are
Where, exactly, are you looking "on Vodafone"? This as well needs some clarification.
I need to understand your exact configuration in order to provide you with proper guidance. There are many different possible configurations available, each with their own separate resolution paths when problems happen. So understanding your exact configuration is critical to helping you. The basic choices for your configuration are:
I'm sorry to be so exact here, but each configuration would, based on the problem you report, have a different resolution path...so understanding your configuration is critical to providing you with useful guidance.
