This is such a royal pain. I get an email that I want to forward. I find an older email from the person I want to send this email to and try to copy their email address but there's no select function like I have on my old Torch. No select text, no cut, no copy, no paste. The only way to do it is to save that into my address book as a contact. Then in the forward email add in the new contact. That sucks when you don't want that person in your address book.
Then there's the forwarding. I forwarded an email to a colleague and asked him to reply to the email. He called to tell me that there was no email in the header just the same of the person who sent me the original email. I did this with a few emails - sending them to myself - and he was right. The actually email address does not show in the forwarded email.
Sending new SMS is also problematic. I can't insert a phone number then move to the text box but there is no text box. You have to do it in reverse. Compose the text THEN insert the phone number.
Generally speaking I prefer the email, text and BBM features in my old Torch.

To select text simply touch and hold the screen where the text is, manipulate the selection sliders and the tap the blue highlighted text. A menu pops up on the right, select copy or cut.
To paste it, simply tap and hold in the text area you want to put the text into and then chose paste from the menu that pops up.
Actually 'exactly' the same process as previous, just without the touch pad.
Not sure about your forwarding issues, but to send a SMS simply start to compose one, type in the contact name or a phone number then push the submit button this will give you the text box below, or you can continue to add numbers or contacts into the to field.

ok, fair enough on the copy and past of actual text but open an existing email and try to copy the email address. You can't. Someone said it might be because I have an older version of the OS. He was in Canada and said he could copy and past email addresses similar to how it was done on the older phones. I have 10.0.10.88 Is that the latest version?
