Despite setting the email acocunts on the Z10 to only sync e-mails for the last 3 days, our entire exchange accounts are being pulled on the Z10s. Any ideas as you can no longer delete on handheld only. Also contacts are being dupolicated/quadrupled for no reason.

My apologies, this feature is not available in BlackBerry 10. With ActiveSync the BlackBerry Z10 is connected directly to the server and if you delete an email it will remove it from the Exchange inbox.
