How can a 'Today' style theme retrieve information from a third party app so it can display it? Is there an extension API or anything the application needs to implement?

This is not currently supported, but is a great idea. I recommend logging a feature request in the Issue Tracker: https://www.blackberry.com/jira/secure/Dashboard.j

Themes can query information from the built in BlackBerry applications, but not from third party applications.
