I had tried the steps you mentioned - and have just done so again multiple times. Still no joy. Has anyone managed to get this to work?

Yup, that was it. Just went through the whole process __very__carefully__ (I'd probably been a little cavalier about it before) and noticed that my config was attempting to deploy and run the ARM version in the simulator. My bad.
Up and running - many thanks. Now if only I had a developer device....
