I tried touching the app until it pulses and deleting it and it comes back when I restart the simulator.
I tried using "blackberry-deploy -uninstallApp" but I get "failure 500 TypeError" for every sensible package-id.
I tried https://SIMULATOR_IP_ADDRESS/appInstaller.html but the browser can't find the page.
What's the official BlackBerry way to remove an app from the simulator?

I shut down the VM and restarted it and my "TestProject" app is still there.
Is there a way to shut down the (virtual) phone without shutting down VMware?

When this happens, I found that you have to Stop debugging.
Restart the VM.
Then do the long hold on the icon and then delete it.

Just want to state that you are doing it right. This may be a bug in this new simulator release. I've never had a problem removing an app from the simulator with the long press then tap X method.

Yeah. I delete the apps from the simulator and restart the VM and they come back. This worked for earlier versions.
I'm running the simulator in VMware Player and that doesn't have snapshots anyway!
